The Chinese Academy of Science (CAS) Institute of Intelligent Machines (IIM) in Hefei has developed a biometrics device that uses a person’s pace to identify them. The device measure weight and two-dimensional sheer forces applied by a person’s foot during walking to create a uniquely identifiable biometrics profile. The device can be covertly installed in a floor and is able to collect biometrics data on individuals covertly without their knowledge. When questioned about the device’s potential applications, IIM officials stated the device was being used by “secret” customers and was not available on the commercial market. IIM also said they were involved with China’s “Program 863.”
(COMMENT: Program 863 is China’s national high-technology development plan that includes both military and civilian technology development programs; therefore, it is likely the People’s Liberation Army (PLA) is one of the customers for whom this biometrics device was developed. END COMMENT)

Wouldn't it be quite easy to bypass this by using ankle weights or something similar that changes your weight and disturbs the regular "pressure pattern"?

Imagine a security ante room, you have to enter the room, walk down a hallway to a login console. If you try to use someone else's access card or code, it would fail because the floor biometric did not match the authorized user.

This is a clever idea. I've actually seen something similar to this where the pattern of the user's keycard moving along a hallway was monitored by sensors in order to verify their biometric print. If I remember correctly, manual override was available for cases where someone had had an injury.

What happens when you start working out and lose weight? Does it auto detect the gradual fluctuations and changes and account for that by changing your profile?

I was involved in the installation of voice identification equipment at some airbase or another. It's interesting to note that every month all the females had failed log-ins for about 7 days a piece, corresponding to their menstrual cycle, which changed the sub harmonics of their voices... which is just more evidence that woman can't be trusted...

We exploited the voice biometric lock at our lab. Hidden voice recording. One note - the further the recorder was from the person, it picked up reverb from the hallway - and failed login.
older fingerprint locks defeated with a positive cast of the finger needed. Newer systems can detect the lack of light depth in fake skin or casts.
Many high security doors, still use keyed locks in the event the high tech security device fails. These are usually located in the guard shack.
Guard shacks have the worst security in the whole building, and master keys can be found laying around - they are usually too big and heavy to carry in the guard's pocket - or shared. The guard shack/office will likely be the only place with no video cameras!
