Can I get a good read on sniffing packets, also by sniffing can we target a particular person about it?

I can recommend Practical Packet Analysis by Chris Sanders.

As for targeting specific people, most packet sniffers have an option to filter results. To target a specific IP, you would just filter out everyone else's.

EDIT: I can also recommend Computer Networking Internet Protocols in Action by Jeanna Matthews. Her approach is more about explaining and understanding packets, rather then practical uses for packet analysis as the previous book. They are both good reads though, not too complex and full of information.

a lot of times you have to go back to the basic texts on computers and networks - how they work.
In order to grasp some of the deeper text on packetsniffing, you need to know how they are created, why, how they get from your computer to the server, and why the server accepted it.

Don't jump over the basic study to higher levels, you will have a weak foundation to support your knowledge.

I thought shit like understanding the OSI layers was stupid, but it helped me mentally see the internet working -
