well, Baldur´s Gate and Icewind Dale should run without any problems, they are in the WineHQ database and so have been already successfully tested.
umm, nothing to debug, so I think you mean the changes that need to be done in the Wine config, check here for what to change to be able to run different applications in Wine (the changes needed for Baldur´s Gate and Icewind Dale can be found here too):

hard to tell if the .bin-files are good, you´ll see when you´ve created the CDs/DVDs out of them, good luck!
